What happens if you run out of ideas or don’t have any food left at home to make a meal? Well, these salmon cake bad-boys are your lifesaver when you need to make a quick meal. They’re so easy and simple to make and you’ll be surprised how delicious they turn out to be. I always love eating salmon and salmon burgers are expensive at restaurants so I have decided to make my own! Salmon cakes can vary in sizes and you can choose how to shape them and how big you want yours to be! Canned Salmon is not expensive either so you can have a heart healthy meal without breaking your wallet.
You can pair your salmon cakes with tzatziki dipping sauce for the perfect meal! You can make the Tzatziki sauce yourself and it would be less costly. All you need is Greek yogurt, grated cucumbers, dill, parsley, salt, pepper and a bit of lemon juice. You can always taste test it while mixing up the ingredients.
PREP TIME: 20 MINUTES || COOKING TIME: 20 MINUTES
Ingredients:
2 teaspoons of oil (I use avocado oil)
1 small-medium sized onion, chopped and diced.
3-4 cloves of fresh garlic, chopped and diced.
3 cans of salmon (I used sockeye salmon)
1 teaspoon of dried dill
1 teaspoon of dried parsley
2 teaspoons of Epicure CCB spices mix
2 beaten eggs
3/4 – 1 cup of Panko flakes (the more you add, the crispier it will be)
salt and pepper to taste
1 red or orange bell pepper, chopped and diced (optional)
Cooking Instructions:
Salmon Cakes:
- Chop up the onions and garlic into dices. If you chop the onions into 1cm cubes, your salmon cakes will be crunchy upon every bite. It depends what you prefer.
- Heat up a non-stick pan to medium heat and coat the pan with a bit of oil.
- Sautee the onions and garlic together and add some pepper to taste, takes about 5 minutes.
- Once the onions and garlic are cooked, the onions will turn transparent in colour.
- Remove the pan from the stove and scoop the onions and garlic mixture into a mixing bowl.
- Let it cool for 5 minutes before adding in the canned salmon.
- Add in all 3 cans of salmon into the onion mixture and mix well.
- You can mash the salmon until you break up all the chunks.
- Now, add in the dill, parsley, salt and pepper. Mix well.
- Then, add the Epicure CCB spice into the mixture, or you can easily make your own with the following ingredients: bacon bits, parsley, salt, shredded parmesan and green onions.
- Mix everything together until it is well combined.
- Then, add in the 2 beaten eggs and mix well.
- Lastly, add in the Panko flakes (divide them into 1/4 cup batches and add them). Make sure the mixture is well combined and that the Panko flakes coats all the salmon.
- Using your hands, form small balls and flatten them out slightly so it looks similar to a small hockey puck shape.
- Heat the non-stick pan to medium heat and drizzle the pan with oil.
- Place the salmon cakes into the pan and cook each side for 2-3 minutes to allow the eggs and Panko to combine.
- Flip the salmon cakes over as the bottom starts to become golden brown in colour.
- Voila! Once you’re done both sides, it’s ready to be chowed down!!!
Whip up some homemade tzatziki sauce if you happen to have some Greek yogurt at home along with some delicious cucumbers! It’ll make your meal extra delicious!!!
