Banana Bread – Five Roses Recipe

I have always loved eating bananas but the store bought banana breads are always too sweet for my taste buds. I have researched so many different Banana bread recipes and most of them have high sugar contents which takes away from the rich banana flavour and aroma of the fresh bread. Then, I came across Five Roses Cookbook which had an amazing low sugar, low cholesterol, and low sodium recipe for banana breads.So, I figured I would try making it myself. After two attempts, the batter turned out really soft and chewy once it is ready from the oven. I can probably eat a couple slices and not feel guilty about having a healthy and nutritious snack. If you want the bread to be moist and soft, keep the loaf uncut overnight to lock in all the steam and moisture.

Trust me, when you have some leftover bananas and want to make good use of it, THROW THEM IN A BANANA BREAD!!! It will blow your mind as to how simple this recipe is and how easy it is to make. If you want a bit of an extra crunch, add in some chopped walnuts to the batter and it will taste extra good!

PREP TIME: 30 MINUTES     ||     COOKING TIME: 60 MINUTES

Ingredients:

Banana Bread Batter

1.5 cups of all-purpose white flour

2 tsp of baking powder

1/4 tsp of baking soda

1 tsp of salt (I used Kosher Salt)

1/4 cup of sugar (I used coconut sugar)

2 eggs (beaten eggs)

1/3 cup of honey

1 cup of mashed bananas

optional: 1/2 CUP OF CHOPPED WALNUTS!!! (you can substitute it with sliced almonds pumpkin seeds or flax seeds.

 

Cooking Instructions: 

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a mixing bowl or stand mixer, mix together white flour, baking powder, baking soda, salt and sugar. (dry ingredients)
  3. Add in the chopped walnuts to the mixing bowl.
  4. In a separate mixing bowl, whisk and beat the eggs. Then, add in the honey and mashed bananas. (wet ingredients)
  5. Now, pour the wet ingredients into the dry ingredients mixing bowl.
  6. Mix all the ingredients together until the flour is moistened.
  7. Get the loaf pan ready by coating the insides with butter to prevent the batter from sticking to the pan.
  8. Now, pour the batter into the loaf pan and place it into the oven.
  9. Bake it for 55-60 minutes until the top of the loaf is golden brown. You should start to see the loaf rise half way through the cooking time.
  10. When it is ready, take it out of the oven and let it cool for 1-2 hours. (Tip: Keep it stored for 5 hours or overnight before cutting the loaf to lock in all the moisture so it remains soft and moist.)
