I absolutely love matcha pudding since it’s my ultimate favourite! When I dine out at dessert cafes, I always wanted to know how they made the dessert so delicious and creamy. So… I decided to experiment and make my own matcha pudding. This has become an all-star in my family and my boyfriend’s family. My boyfriend loved it so much that he always requests for more after I finish making one batch. I make it fairly often in the house and it has become so popular that I have received multiple requests for my matcha pudding.
It is so delicious that you wish you made more! It absolutely melts in your mouth when you scoop a spoonful.
PREP TIME: 15 MINUTES || COOKING TIME: 45 MINUTES
Ingredients:
1 1/2 teaspoon of Gelatine (powdered gelatine)
150 mL of Hot Water
40g of organic cane sugar or Rock Sugar (cane sugar is a healthy alternative)
3 teaspoons of Matcha powder
150 mL of milk
75 – 100 mL of whipping cream (if you want it extra creamy – use 100 mL)
Cooking Instructions:
- Pour 6-7 cups of water into a pot (fill approximately half the pot) and turn on the stove until it starts to boil.
- Using a metal bowl, combine the gelatine powder and hot water together – start mixing the mixture with a metal spoon or heat-resistant spatula.
- After the water starts boiling in the pot, turn it down to medium heat to keep the water warm.
- Using a double boiler method, place the metal bowl on top of the pot and continue stirring the mixture until the gelatine fully melts – using the heat and steam from the boiled water.
- Then, add in all the cane sugar (or substitute with rock sugar) and start stirring the mixture. Continue stirring the mixture until all the sugar has dissolved (takes around 10-15 minutes).
- Now, take the metal bowl off the pot and place it onto the counter. Place a heat-resistance pad under the bowl to reduce the heat from escaping.
- Using a sifter, add the matcha powder into the metal bowl (divide the matcha into small batches to break out some of the clumps – making the mixture smoother when you mix it together). Continue stirring the mixture until it is well-combined.
- Then, add in the milk and whipping cream into the same metal bowl and mix well.
- To ensure the mixture is smooth as an end result, pour all the mixture into a blender or food processor and blend well at low speed. This will help break off any additional matcha clumps formed in the mixture.
- Now, pour the mixture evenly into 4 ramekins and let the ramekins sit for 10 minutes to settle the mixture. Then add surround wrap to seal the top of the ramekins.
- Place the ramekins into the fridge and refrigerate for at least 4 hours or overnight for better results.
Tips: Add some fresh fruits (such as blueberries, strawberries, raspberries or mangoes) on top of the matcha pudding once it is solidified and ready to eat.
You can also add some red bean on top of the pudding to enhance and bring out the flavour. This is an amazing combination!
